Pho Bo – Vietnamese Beef Noodle Soup

Ingredients:

  • 1 pound beef sirloin or flank steak, sliced thinly
  • 1 onion, peeled and halved
  • 1 ginger, peeled and sliced thinly
  • 5-6 cups beef broth
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 1 tablespoon soy sauce
  • 10 ounces rice noodles
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup chopped green onions
  • 2-3 jalapenos, sliced
  • 1 lime, cut into wedges

Instructions:

  1. Preheat the oven to 350°F. Place the onion and ginger on a baking sheet and roast for 15-20 minutes, or until lightly browned.
  2. Meanwhile, cook the rice noodles according to package instructions and rinse with cold water to stop the cooking process.
  3. In a large pot, bring the beef broth to a boil. Add the fish sauce, sugar, and soy sauce, stirring to combine.
  4. Add the sliced beef and let cook for 1-2 minutes, or until just cooked through. Remove the beef from the broth and set aside.
  5. Strain the broth and discard the onion and ginger. Return the broth to the pot and bring it back to a boil.
  6. Divide the cooked noodles into individual bowls. Top each bowl with the cooked beef, cilantro, green onions, and jalapenos.
  7. Ladle the hot broth over each bowl of noodles. Serve with lime wedges.
