Pho Bo – Vietnamese Beef Noodle Soup
Ingredients:
- 1 pound beef sirloin or flank steak, sliced thinly
- 1 onion, peeled and halved
- 1 ginger, peeled and sliced thinly
- 5-6 cups beef broth
- 3 tablespoons fish sauce
- 1 tablespoon sugar
- 1 tablespoon soy sauce
- 10 ounces rice noodles
- 1/2 cup fresh cilantro leaves
- 1/2 cup chopped green onions
- 2-3 jalapenos, sliced
- 1 lime, cut into wedges
Instructions:
- Preheat the oven to 350°F. Place the onion and ginger on a baking sheet and roast for 15-20 minutes, or until lightly browned.
- Meanwhile, cook the rice noodles according to package instructions and rinse with cold water to stop the cooking process.
- In a large pot, bring the beef broth to a boil. Add the fish sauce, sugar, and soy sauce, stirring to combine.
- Add the sliced beef and let cook for 1-2 minutes, or until just cooked through. Remove the beef from the broth and set aside.
- Strain the broth and discard the onion and ginger. Return the broth to the pot and bring it back to a boil.
- Divide the cooked noodles into individual bowls. Top each bowl with the cooked beef, cilantro, green onions, and jalapenos.
- Ladle the hot broth over each bowl of noodles. Serve with lime wedges.
