Pig’s Trotter, Potato Cream and Caviar: Chef’s Recipe
Ingredients:
- 4 pig’s trotters
- 2 large potatoes, peeled and diced
- 4 tbsp unsalted butter
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 4 tbsp heavy cream
- 4 tbsp caviar
- Salt and pepper to taste
Instructions:
Preparing the pig’s trotters:
- Place pig’s trotters in a large pot and cover with water. Bring to boil and then reduce heat to low. Simmer for 2-3 hours or until the meat becomes tender.
- Remove the meat from the pot and take out the bones. Cut the meat into small pieces and set aside.
Preparing the potato cream:
- Boil the potatoes in a pot with salted water for approximately 15 minutes or until the potatoes become tender. Drain and set aside.
- Melt butter in a pan over medium heat. Add onion and garlic, and cook until soft.
- Add the potatoes to the pan and cook for another 2-3 minutes, stirring occasionally.
- Add heavy cream and continue cooking for another 2-3 minutes or until the mixture thickens slightly.
- Puree the potato mixture in a blender until smooth.
Serving suggestions:
- Place the pig’s trotter pieces on a plate and top with a spoonful of potato cream.
- Place a small spoonful of caviar on top of the potato cream.
- Add salt and pepper to taste and serve immediately.
