Pig’s Trotter, Potato Cream and Caviar: Chef’s Recipe

Ingredients:

  • 4 pig’s trotters
  • 2 large potatoes, peeled and diced
  • 4 tbsp unsalted butter
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 4 tbsp heavy cream
  • 4 tbsp caviar
  • Salt and pepper to taste

Instructions:

Preparing the pig’s trotters:

  1. Place pig’s trotters in a large pot and cover with water. Bring to boil and then reduce heat to low. Simmer for 2-3 hours or until the meat becomes tender.
  2. Remove the meat from the pot and take out the bones. Cut the meat into small pieces and set aside.

Preparing the potato cream:

  1. Boil the potatoes in a pot with salted water for approximately 15 minutes or until the potatoes become tender. Drain and set aside.
  2. Melt butter in a pan over medium heat. Add onion and garlic, and cook until soft.
  3. Add the potatoes to the pan and cook for another 2-3 minutes, stirring occasionally.
  4. Add heavy cream and continue cooking for another 2-3 minutes or until the mixture thickens slightly.
  5. Puree the potato mixture in a blender until smooth.

Serving suggestions:

  • Place the pig’s trotter pieces on a plate and top with a spoonful of potato cream.
  • Place a small spoonful of caviar on top of the potato cream.
  • Add salt and pepper to taste and serve immediately.
