  6. Make 4 wells in the mixture and crack an egg into each well.
  7. Cover and continue cooking for another 5-7 minutes, until the eggs are set but still runny in the center.
  8. Serve hot, garnished with fresh herbs if desired.

Verdict:

This piperade recipe makes a flavorful and satisfying dish that’s perfect for breakfast, brunch, or even dinner. The combination of sweet peppers and tangy tomatoes, spiced up with paprika and cumin, creates a rich and aromatic base for the eggs. The runny yolks add a creamy texture and extra protein, making this a nutritious and balanced meal. Serve it with a crusty bread or tortilla to soak up all the juices, and enjoy!

Serving suggestions:

  • Top with shredded cheese for extra indulgence.
  • Pair with a side salad or roasted potatoes for a complete meal.
  • Variations: add chorizo, ham, or bacon for a meatier version; use green or orange peppers instead of red for a colorful twist; replace the eggs with tofu for a vegan option.
