Pissaladière – Regal

Pissaladière Recipe

Ingredients:

  • 1 tbsp olive oil
  • 2 large onions, sliced
  • 2 cloves garlic, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tbsp fresh rosemary leaves
  • Salt and black pepper, to taste
  • 1 sheet of puff pastry, thawed
  • 1/2 cup black olives, pitted and chopped
  • 4-6 anchovy fillets, chopped
  • 1 tbsp capers

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large sauté pan, heat the olive oil over medium heat. Add the onions and garlic and cook, stirring occasionally, until the onions are golden brown and caramelized, about 20-25 minutes.
  3. Add the thyme, rosemary, salt, and black pepper to taste, and cook for another 5 minutes.
  4. Roll out the puff pastry and place it on a baking sheet lined with parchment paper. Prick the pastry all over with a fork.
  5. Spoon the caramelized onions over the pastry, leaving a little bit of space around the edges.
  6. Sprinkle the black olives, chopped anchovies, and capers over the top of the onions.
  7. Bake for 20-25 minutes, or until the pastry is golden brown and cooked through.
  8. Let the pissaladière cool for a few minutes before slicing and serving.

Verdict:

Pissaladière is a savory French tart that is packed with flavor. The caramelized onions, salty anchovies, and briny capers all work together to create a delicious and complex taste. The puff pastry provides a flaky and buttery texture that is the perfect base for all of the toppings. This dish is great as an appetizer or as a main course served with a simple salad.

Serving Suggestions:

Pissaladière can be served warm or at room temperature. It pairs well with a crisp white wine or a cold beer. You can also garnish it with some fresh herbs, like parsley or thyme, for an added pop of color and flavor. Enjoy!
