- 2 large onions, sliced
- 2 cloves garlic, chopped
- 1 tbsp fresh thyme leaves
- 1 tbsp fresh rosemary leaves
- Salt and black pepper, to taste
- 1 sheet of puff pastry, thawed
- 1/2 cup black olives, pitted and chopped
- 4-6 anchovy fillets, chopped
- 1 tbsp capers
Instructions:
- Preheat the oven to 375°F (190°C).

- Roll out the puff pastry and place it on a baking sheet lined with parchment paper. Prick the pastry all over with a fork.
- Spoon the caramelized onions over the pastry, leaving a little bit of space around the edges.
- Sprinkle the black olives, chopped anchovies, and capers over the top of the onions.
- Bake for 20-25 minutes, or until the pastry is golden brown and cooked through.
- Let the pissaladière cool for a few minutes before slicing and serving.
Verdict:
Pissaladière is a savory French tart that is packed with flavor. The caramelized onions, salty anchovies, and briny capers all work together to create a delicious and complex taste. The puff pastry provides a flaky and buttery texture that is the perfect base for all of the toppings. This dish is great as an appetizer or as a main course served with a simple salad.
