Pistachio crusted lamb, mint yoghurt
Ingredients
- 4 lamb chops
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup breadcrumbs
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/2 cup plain Greek yoghurt
- 2 tablespoons chopped fresh mint
Instructions
- Preheat the oven to 375°F (190°C).
- Season the lamb chops with salt and pepper.
- Combine the chopped pistachios and breadcrumbs in a shallow bowl.
- Coat each lamb chop in the pistachio mixture, pressing the mixture onto the lamb to make it adhere.
- Heat the olive oil in a large oven-safe skillet over medium-high heat.
- Add the lamb chops to the skillet and cook for 2-3 minutes per side, or until the pistachio crust is golden brown.
- Transfer the skillet to the oven and bake for an additional 8-10 minutes, or until the lamb is cooked to your desired level of doneness.
- While the lamb is cooking, combine the Greek yoghurt and chopped mint in a small bowl to make the mint yoghurt.
- Serve the lamb chops hot with a dollop of mint yoghurt on the side.
