Pistachio crusted lamb, mint yoghurt

Ingredients

  • 4 lamb chops
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup breadcrumbs
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1/2 cup plain Greek yoghurt
  • 2 tablespoons chopped fresh mint

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the lamb chops with salt and pepper.
  3. Combine the chopped pistachios and breadcrumbs in a shallow bowl.
  4. Coat each lamb chop in the pistachio mixture, pressing the mixture onto the lamb to make it adhere.
  5. Heat the olive oil in a large oven-safe skillet over medium-high heat.
  6. Add the lamb chops to the skillet and cook for 2-3 minutes per side, or until the pistachio crust is golden brown.
  7. Transfer the skillet to the oven and bake for an additional 8-10 minutes, or until the lamb is cooked to your desired level of doneness.
  8. While the lamb is cooking, combine the Greek yoghurt and chopped mint in a small bowl to make the mint yoghurt.
  9. Serve the lamb chops hot with a dollop of mint yoghurt on the side.
