Ingredients:

  • 3 cups all-purpose flour
  • 1 ½ teaspoons salt
  • 1 tablespoon sugar
  • 1 tablespoon active dry yeast
  • 1 ⅓ cups warm water
  • 2 tablespoons olive oil

Instructions:

  1. In a large bowl mix together flour, salt and sugar.
  2. In a separate bowl mix 1 tablespoon of active dry yeast with 1 ⅓ cups warm water.
  3. Make a well in the center of the dry ingredients and pour in the yeast mixture and olive oil. Stir until a soft and sticky dough starts to form.
  4. Knead the dough on a lightly floured surface for about 10 minutes until it becomes smooth and elastic. Place the dough in a lightly oiled bowl, cover with a towel and let it rise for about an hour or until doubled in size.
  5. Preheat your plancha or a flat griddle to medium-high heat.
  6. Divide the dough into 8 pieces. Roll each piece out into ½ inch thick rounds.
  7. Carefully place each pita bread round on the plancha or griddle, and cook for about 2-3 minutes or until the bottom is golden brown and puffy. Flip over and cook for another 1-2 minutes until the other side is golden brown as well.
  8. Remove from the plancha or griddle and serve warm.
