Poivrade Artichokes and “Enhanced” Carrots Recipe
Ingredients:
- 2 large Artichokes, trimmed and cleaned
- 1 Red Onion, diced
- 3 Garlic Cloves, minced
- 2 Tbsp Olive Oil
- 1/2 Tsp Black Pepper, freshly ground
- 1/2 Tsp Salt
- 2 Tbsp Fresh Lemon Juice
- 4 Medium-sized Carrots, peeled and sliced
- 2 Tbsp Honey
- 2 Tsp Thyme Leaves, freshly chopped
- 2 Tbsp Butter
Instructions:
Poivrade Artichokes
- In a large pot, pour two cups of water and add the lemon juice.
- Cut the artichokes and remove the leaves until you reach the heart.
- Cut the artichokes in half, vertically.
- Place the artichokes in the pot with the lemon juice mixture and cover with a lid.
- Bring to a boil over high heat, then reduce heat to low and let simmer for 20-25 minutes.
- Remove the artichokes from the water and set aside.
Enhanced Carrots
- In a skillet, melt the butter over medium heat.
- Add the onion, garlic, and sliced carrots to the pan and sauté until the onions are translucent.
- Add the honey, thyme leaves, salt, and black pepper to the skillet and continue sautéing for another 10 minutes.
- Remove from the heat when the carrots are tender.
Serving Suggestion:
Transfer the artichokes and carrots to a serving platter and garnish with fresh thyme and lemon wedges. Serve hot.
