Poivrade Artichokes and “Enhanced” Carrots Recipe

Ingredients:

  • 2 large Artichokes, trimmed and cleaned
  • 1 Red Onion, diced
  • 3 Garlic Cloves, minced
  • 2 Tbsp Olive Oil
  • 1/2 Tsp Black Pepper, freshly ground
  • 1/2 Tsp Salt
  • 2 Tbsp Fresh Lemon Juice
  • 4 Medium-sized Carrots, peeled and sliced
  • 2 Tbsp Honey
  • 2 Tsp Thyme Leaves, freshly chopped
  • 2 Tbsp Butter

Instructions:

Poivrade Artichokes

  1. In a large pot, pour two cups of water and add the lemon juice.
  2. Cut the artichokes and remove the leaves until you reach the heart.
  3. Cut the artichokes in half, vertically.
  4. Place the artichokes in the pot with the lemon juice mixture and cover with a lid.
  5. Bring to a boil over high heat, then reduce heat to low and let simmer for 20-25 minutes.
  6. Remove the artichokes from the water and set aside.

Enhanced Carrots

  1. In a skillet, melt the butter over medium heat.
  2. Add the onion, garlic, and sliced carrots to the pan and sauté until the onions are translucent.
  3. Add the honey, thyme leaves, salt, and black pepper to the skillet and continue sautéing for another 10 minutes.
  4. Remove from the heat when the carrots are tender.

Serving Suggestion:

Transfer the artichokes and carrots to a serving platter and garnish with fresh thyme and lemon wedges. Serve hot.
