Pork Stew with Potatoes, White Beans and Kale Recipe

Ingredients:

  • 2 lbs pork shoulder, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp paprika
  • 1 tsp cumin
  • 1 tsp dried thyme
  • 4 cups chicken broth
  • 1 cup white wine
  • 2 potatoes, peeled and chopped into 1 inch pieces
  • 1 can (15 oz) white beans, rinsed and drained
  • 4 cups kale, chopped into bite-size pieces
  • Salt and pepper, to taste
