Ingredients

  • 1 lb. boneless pork loin, cut into bite-sized pieces
  • 1 cup dried apricots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp. ground cumin
  • 1 tsp. ground coriander
  • 1 tsp. paprika
  • Salt and pepper to taste
  • 2 tbsp. olive oil
  • 1 cup chicken broth
  • 2 tbsp. honey
  • 2 tbsp. fresh parsley, chopped
