Portuguese Omelet Recipe

Ingredients:

  • 4 eggs
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 red pepper, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions:

  1. Heat 2 tablespoons of olive oil in a non-stick pan and add the chopped onion and minced garlic. Cook for a few minutes until the onion is translucent.
  2. Add the red pepper and cook for another 5 minutes. Remove the vegetables from the pan and set them aside in a bowl.
  3. In the same pan, add another tablespoon of olive oil and pour in the beaten eggs. Add paprika and salt and pepper to taste. Cook for 2-3 minutes until the omelet starts to set.
  4. Add the cooked vegetables to one half of the omelet. Fold the other half over the vegetables and cook for another 2-3 minutes until the omelet is cooked through and the vegetables are hot.
  5. Slide the omelet onto a plate and serve hot.
