Portuguese Omelet Recipe
Ingredients:
- 4 eggs
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 red pepper, chopped
- 3 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions:
- Heat 2 tablespoons of olive oil in a non-stick pan and add the chopped onion and minced garlic. Cook for a few minutes until the onion is translucent.
- Add the red pepper and cook for another 5 minutes. Remove the vegetables from the pan and set them aside in a bowl.
- In the same pan, add another tablespoon of olive oil and pour in the beaten eggs. Add paprika and salt and pepper to taste. Cook for 2-3 minutes until the omelet starts to set.
- Add the cooked vegetables to one half of the omelet. Fold the other half over the vegetables and cook for another 2-3 minutes until the omelet is cooked through and the vegetables are hot.
- Slide the omelet onto a plate and serve hot.
