Ingredients
- 2 lbs. potatoes, peeled and diced
- 1 bunch sorrel, stemmed and chopped
- 1/2 lb. rillettes
- 2 Tbsp. olive oil
- Salt and pepper
Instructions
- Boil the diced potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the chopped sorrel and cook until wilted, about 3-5 minutes.
- Add the cooked potatoes to the skillet with the sorrel and stir to combine. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Stir in the rillettes and cook until heated through, about 1-2 minutes.
- Season with salt and pepper to taste.
