Potatoes stuffed with pork and mimolette

Potatoes Stuffed with Pork and Mimolette Recipe

Ingredients

  • 4 medium-sized potatoes
  • 1/2 pound ground pork
  • 1/2 cup grated mimolette cheese
  • 1/2 cup bread crumbs
  • 1 egg, lightly beaten
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the potatoes, prick them with a fork in several places, and bake for about an hour or until they are soft when pierced with a fork. Keep an eye on them so they don’t overcook and become mushy.
  3. While the potatoes are baking, cook the ground pork in a large pan over medium heat until browned and cooked through.
  4. Add the bread crumbs to the pork and mix well. Remove from heat and let it cool down for a few minutes.
  5. Add the grated mimolette cheese, beaten egg, olive oil, salt, and pepper to the pork mixture. Mix well.
  6. Cut the top off each potato and scoop out the flesh using a spoon. Leave a thin layer of potato flesh inside the skin so it doesn’t collapse.
  7. Fill each potato skin with the pork and cheese mixture, and place them on a baking sheet.
  8. Bake stuffed potatoes for an additional 15 to 20 minutes or until the filling is golden brown and crispy.
  9. Let them cool down for a few minutes before serving.

Verdict

This stuffed potato recipe is executed to perfection. The mix of the pork, breadcrumbs, cheese, and potatoes creates an appetizing and savory dish that is perfect for lunch or dinner. Enjoy!
