Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 tablespoon dried tarragon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs
  • 1/4 cup milk
  • 1 1/2 cups breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 tablespoons unsalted butter, melted

Instructions:

  1. Preheat oven to 375°F/190°C.
  2. Place flour in a shallow dish. In another shallow dish, mix together tarragon, salt, and pepper. In a third shallow dish, whisk together eggs and milk.
  3. In a fourth dish, combine breadcrumbs and Parmesan cheese.
  4. Pat chicken dry with paper towels and dredge each chicken breast in the flour mixture, shaking off any excess. Dip chicken into the egg mixture, then into the breadcrumb mixture, pressing the breadcrumbs onto the chicken to adhere.
  5. Place the chicken onto a greased baking sheet. Drizzle melted butter on top of each breaded chicken breast.
  6. Bake for 25-30 minutes or until the chicken is cooked through and the crust is golden brown
