Prawn Curry with Coconut Recipe

Ingredients:

  • 1 lb Prawns, peeled and deveined
  • 1 can Coconut milk
  • 1 Onion, chopped
  • 2 Tomatoes, chopped
  • 3 Garlic cloves, minced
  • 1 teaspoon Ginger, minced
  • 1 teaspoon Turmeric powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chili powder
  • Salt, to taste
  • 2 tablespoons Cooking oil
  • Water, as needed
  • Fresh Coriander leaves, chopped (optional for garnish)

Instructions:

  1. Heat oil in a pan and fry onion until soft and golden.
  2. Next, add garlic and ginger, cook for 1-2 minutes until fragrant.
  3. Add chopped tomatoes and cook until they are soft and mushy.
  4. Add the spices, turmeric, coriander powder, cumin powder, and red chilli powder. Stir to combine and cook for another minute.
  5. Pour the coconut milk into the pan and stir to combine. If the curry is too thick, add water as needed. Bring the mixture to a simmer.
  6. Once the curry has simmered for 5-10 minutes and the flavors have combined, add the prawns and cook until they are pink and cooked through for about 5 minutes.
  7. Garnish with chopped coriander leaves if desired.
  8. Serve hot with rice or bread.
