Prawns and Chicken Marinated in Truffles, Mashed Sweet Potato

Ingredients:

  • 8 large prawns, peeled and deveined
  • 2 boneless chicken breasts, sliced into thin strips
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp paprika
  • 1 garlic, minced
  • 2 tbsp truffle oil
  • 1 large sweet potato, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • Chopped chives or scallions for garnish

Instructions:

  1. In a large bowl, season the prawns and chicken slices with salt, black pepper, paprika, minced garlic, and truffle oil. Toss to coat the meats well.
  2. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or a grill pan on high heat.
  4. Grill the prawns and chicken slices for about 3-4 minutes per side or until cooked through. Set aside.
  5. In a pot, boil the sweet potato cubes until soft. Drain and return the pot to the stove.
  6. Add the butter and milk to the pot and mash the sweet potato until smooth and creamy. Season with salt and pepper.
  7. Divide the mashed sweet potato into 2 serving plates. Arrange the grilled prawns and chicken slices on top of the sweet potato.
  8. Sprinkle grated Parmesan cheese over the meats and garnish with chopped chives or scallions.
