Quail with Sherry
Ingredients
- 4 quails, washed and dried
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup dry sherry
- 1/2 cup chicken broth
- 1 tablespoon butter
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the quails with salt and black pepper to taste. Add the quails to the skillet and cook for about 3-4 minutes on each side or until golden brown.
- Remove the quails from the skillet and set aside.
- Add sherry to the skillet and bring to a boil. Scrape the bottom of the skillet to release any browned bits.
- Stir in chicken broth and bring to a simmer.
- Add the quails back to the skillet, spoon sauce over the quails and simmer for about 2-3 minutes or until the quails are cooked through.
- Remove quails from the skillet and place on a plate. Add butter to the skillet and stir until melted and combined with the sauce.
