Quail with White Grapes

Ingredients:

  • 4 quail, cleaned and seasoned with salt and pepper
  • 2 cups white grapes, halved and seeded
  • 1 cup chicken stock
  • 1/2 cup white wine
  • 2 garlic cloves, minced
  • 2 shallots, diced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon fresh thyme leaves
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375°F.
  2. Place the quail on a baking tray and roast for about 20 minutes or until golden brown.
  3. In a pan over medium heat, melt the butter and add the olive oil.
  4. When hot, add the garlic and shallots, stirring often, until softened, about 2-3 minutes.
  5. Add the white wine, chicken stock, thyme, and salt and pepper to taste.
  6. Allow the mixture to come to a simmer and cook for about 8-10 minutes. The sauce should thicken and reduce by half.
  7. Add the grapes to the pan and cook for about 2-3 minutes until they begin to soften. Turn off the heat.
  8. Place the quail on the serving plates and spoon the grape sauce over the top. Sprinkle some fresh thyme leaves over the top for garnish.
