Quail with White Grapes
Ingredients:
- 4 quail, cleaned and seasoned with salt and pepper
- 2 cups white grapes, halved and seeded
- 1 cup chicken stock
- 1/2 cup white wine
- 2 garlic cloves, minced
- 2 shallots, diced
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 tablespoon fresh thyme leaves
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F.
- Place the quail on a baking tray and roast for about 20 minutes or until golden brown.
- In a pan over medium heat, melt the butter and add the olive oil.
- When hot, add the garlic and shallots, stirring often, until softened, about 2-3 minutes.
- Add the white wine, chicken stock, thyme, and salt and pepper to taste.

- Add the grapes to the pan and cook for about 2-3 minutes until they begin to soften. Turn off the heat.
- Place the quail on the serving plates and spoon the grape sauce over the top. Sprinkle some fresh thyme leaves over the top for garnish.
