Rabbit Gigolette with Chanterelles
Ingredients:
- 4 Rabbit Gigolettes (trimmed)
- 200g Chanterelles (cleaned and trimmed)
- 2 Tbsp Olive Oil
- 2 Tbsp Butter
- 2 Garlic Cloves (minced)
- 1 Shallot (finely chopped)
- 500 ml Chicken Stock
- 150ml White Wine
- Thyme (a few sprigs)
- Salt and Pepper to taste
Method:
- Preheat the oven to 180 degrees Celsius.
- Season the rabbit gigolettes with salt and pepper.
- In a large ovenproof pan, heat olive oil and butter over medium-high heat.
- Sear the rabbit gigolettes for about 4-5 minutes per side until browned.
- Remove the gigolettes from the pan and set aside.
- Lower the heat and add minced garlic and shallot to the pan.
- Sauté for 2-3 minutes until fragrant and tender.
- Now add the chanterelles along with some thyme and cook for another 2-3 minutes until they are tender and browned.
- Add white wine to the pan and let it reduce until there is about 1/4 cup left.
- Pour in chicken stock and bring to a simmer.
- Add the rabbit gigolettes back to the pan, cover with a lid and transfer to the oven.
- Bake for about 25-30 minutes or until the rabbit is cooked through.
- Once done, remove the pan from the oven and let it rest for a few minutes.
- Serve warm with the chanterelle sauce on top.
