Rabbit Gigolette with Chanterelles

Ingredients:

  • 4 Rabbit Gigolettes (trimmed)
  • 200g Chanterelles (cleaned and trimmed)
  • 2 Tbsp Olive Oil
  • 2 Tbsp Butter
  • 2 Garlic Cloves (minced)
  • 1 Shallot (finely chopped)
  • 500 ml Chicken Stock
  • 150ml White Wine
  • Thyme (a few sprigs)
  • Salt and Pepper to taste

Method:

  1. Preheat the oven to 180 degrees Celsius.
  2. Season the rabbit gigolettes with salt and pepper.
  3. In a large ovenproof pan, heat olive oil and butter over medium-high heat.
  4. Sear the rabbit gigolettes for about 4-5 minutes per side until browned.
  5. Remove the gigolettes from the pan and set aside.
  6. Lower the heat and add minced garlic and shallot to the pan.
  7. Sauté for 2-3 minutes until fragrant and tender.
  8. Now add the chanterelles along with some thyme and cook for another 2-3 minutes until they are tender and browned.
  9. Add white wine to the pan and let it reduce until there is about 1/4 cup left.
  10. Pour in chicken stock and bring to a simmer.
  11. Add the rabbit gigolettes back to the pan, cover with a lid and transfer to the oven.
  12. Bake for about 25-30 minutes or until the rabbit is cooked through.
  13. Once done, remove the pan from the oven and let it rest for a few minutes.
  14. Serve warm with the chanterelle sauce on top.
