Rabbit with Beer Recipe
Ingredients
- 1 medium-sized rabbit, dressed and cut into serving pieces
- 2 bottles of beer (use your favorite kind)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tomatoes, diced
- 2 tablespoons tomato paste
- 2 teaspoons smoked paprika
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the rabbit with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the rabbit on both sides, about 5 minutes per side. Remove from the pot and set aside.
- Add the garlic, onion, red and green bell peppers to the pot and cook until the vegetables are soft, stirring occasionally for about 5 minutes.
- Add the diced tomatoes, tomato paste, smoked paprika, bay leaves, and beer to the pot. Bring to a simmer, scraping any browned bits from the bottom of the pot.
