Ingredients

  • 1 rabbit, cut into pieces
  • 2 tablespoons olive oil
  • 2 onions, chopped
  • 4 garlic cloves, minced
  • 2 apples, peeled and chopped
  • 2 pears, peeled and chopped
  • 1 cup cider
  • 1 cup chicken broth
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Directions

  1. Season the rabbit pieces with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat and brown the rabbit pieces on all sides. Remove from the skillet and set aside.
  3. Add the onions and garlic to the same skillet and sauté until softened, about 5 minutes.
  4. Add the chopped apples and pears and sauté for another 5 minutes.
