Ingredients:

  • 2 racks of lamb, trimmed and frenched
  • 2 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp dijon mustard
  • 1 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • Salt and pepper
  • 3 tbsp olive oil

  1. Preheat the oven to 375°F.
  2. Season the lamb racks with salt and pepper on both sides. Set aside.

  6. Roast in the oven for 25-30 minutes, or until the internal temperature of the lamb reaches 135°F for medium-rare and 145°F for medium.
  7. Remove from the oven and let the lamb rest for 10 minutes before slicing and serving.
