Real bull gardianne, organic red rice casserole


Real Bull Gardianne

Ingredients:

  • 2 lbs bull meat, cut into chunks
  • 1 bottle of red wine
  • 4 garlic cloves, minced
  • 2 onions, chopped
  • 4 carrots, peeled and sliced
  • 4 celery stalks, sliced
  • 1 bay leaf
  • 1 sprig of thyme
  • 2 tbsp olive oil
  • salt and pepper to taste

Directions:

  1. In a large bowl, marinate the bull meat in red wine for at least 2 hours.
  2. In a large pot, heat the olive oil over medium-high heat. Add the garlic and onions and sauté until the onions are translucent.
  3. Add the bull meat to the pot and cook until browned on all sides. Remove the bull meat from the pot and set aside.
  4. Add the carrots and celery to the pot and sauté until they begin to soften.
  5. Return the bull meat to the pot along with any juices that may have accumulated in the bowl.
  6. Add enough water to cover the meat and vegetables. Then add the bay leaf and thyme.
  7. Bring the mixture to a boil, then reduce heat and simmer for 2-3 hours until the meat is tender.
  8. Remove the bay leaf and thyme and season with salt and pepper to taste.

Serve hot with your favorite sides such as mashed potatoes or roasted vegetables.

Organic Red Rice Casserole

Ingredients:

  • 2 cups of organic red rice
  • 4 cups of organic vegetable broth
  • 2 carrots, peeled and finely chopped
  • 2 stalks of celery, finely chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • salt and pepper to taste

Directions:

  1. Preheat the oven to 350°F (175°C). Grease a casserole dish with olive oil.
  2. Rinse the red rice with cold water and set aside.
  3. In a pot, heat the olive oil over medium-high heat. Add the onion, garlic, celery, and carrots. Sauté until the vegetables are soft and translucent.
  4. Add the red rice to the pot and stir until it is coated with the vegetable mixture.
  5. Add the vegetable broth and dried thyme. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes until the rice is tender.
  6. Once the rice is cooked, transfer it to the casserole dish. Season with salt and pepper to taste.
  7. Cover the casserole dish with foil and bake for 20-25 minutes.
  8. Uncover the casserole dish and bake for an additional 10-15 minutes until the top is slightly crispy.

Serve hot as a side dish or as a main with a fresh salad on the side. Enjoy!
