Rhubarb and Onion Roast Pork Recipe
Ingredients
- 1 ½ lbs pork loin roast
- 1 lb rhubarb, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- ¼ cup honey
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Pat the pork loin dry with paper towels and season with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Brown the pork loin on all sides, about 2-3 minutes per side.
- Remove the pork from the skillet and place it in a baking dish.
- In the same skillet, add the sliced onions and garlic. Cook until onions are softened, about 3-4 minutes.
- Add the sliced rhubarb to the skillet and sauté for another 2-3 minutes.
- Spread the rhubarb and onion mixture over the pork loin.
- Drizzle honey over the top of the mixture.
- Cover the baking dish with foil and bake for 25-30 minutes.
- Remove the foil for the last 5 minutes to allow the top to brown.
- Remove from the oven and let the meat rest for 5-10 minutes before slicing and serving.
