Rhubarb and Onion Roast Pork Recipe

Ingredients

  • 1 ½ lbs pork loin roast
  • 1 lb rhubarb, sliced
  • 1 large onion, sliced
  • 2 cloves garlic, minced
  • ¼ cup honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Pat the pork loin dry with paper towels and season with salt and pepper.
  3. Heat the olive oil in a large skillet over medium-high heat. Brown the pork loin on all sides, about 2-3 minutes per side.
  4. Remove the pork from the skillet and place it in a baking dish.
  5. In the same skillet, add the sliced onions and garlic. Cook until onions are softened, about 3-4 minutes.
  6. Add the sliced rhubarb to the skillet and sauté for another 2-3 minutes.
  7. Spread the rhubarb and onion mixture over the pork loin.
  8. Drizzle honey over the top of the mixture.
  9. Cover the baking dish with foil and bake for 25-30 minutes.
  10. Remove the foil for the last 5 minutes to allow the top to brown.
  11. Remove from the oven and let the meat rest for 5-10 minutes before slicing and serving.
