Rice-Stuffed Peppers

Ingredients:

  • 4 large bell peppers
  • 1 cup uncooked long grain white rice
  • 1/2 lb ground beef
  • 1/2 medium onion, chopped
  • 1/2 cup diced tomatoes
  • 1/2 cup vegetable or chicken broth
  • 1 tsp dried basil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup shredded parmesan cheese

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut off the tops of the bell peppers and remove the ribs and seeds. Set aside.
  3. In a skillet over medium-high heat, cook the ground beef and onion until the beef is browned and the onion is translucent. Drain any excess fat. Add the uncooked rice, diced tomatoes, broth, basil, salt, black pepper, and garlic powder to the skillet. Combine well and bring to a boil. Then reduce the temperature to low, cover, and let it simmer for 20 minutes.
  4. Stuff the bell peppers with the rice and beef mixture. Fill the peppers almost to the top and sprinkle shredded parmesan cheese on top. Place the stuffed peppers in a baking dish and bake for 30 minutes or until the peppers are tender and the cheese is golden brown.
