Rice with beef, mushrooms and cashew nuts: Asian recipe

Rice with Beef, Mushrooms and Cashew Nuts

Ingredients:

  • 1 cup jasmine rice
  • 2 cups water
  • 1 lb beef sirloin, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1/4 cup soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp cornstarch
  • 1/2 cup cashew nuts
  • 1 cup sliced mushrooms
  • 2 green onions, thinly sliced
  • 2 tbsp vegetable oil

Instructions:

  1. Rinse the rice in cold water and drain. Add the rice and water to a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
  2. In a bowl, whisk together the soy sauce, hoisin sauce, and cornstarch. Add the sliced beef and marinate for at least 10 minutes.
  3. In a large skillet or wok, heat the vegetable oil over high heat. Add the garlic and ginger and stir-fry for 1 minute.
  4. Add the marinated beef and stir-fry for 3-4 minutes, or until browned.
  5. Add the sliced mushrooms and cashew nuts to the skillet and stir-fry for another 2-3 minutes, or until the mushrooms are tender.
  6. Serve the beef and mushroom mixture over the cooked rice, garnished with sliced green onions.

Verdict: This rice dish is packed with flavorful beef, mushrooms and crunchy cashew nuts, and infused with the aromatic flavors of garlic and ginger. It makes for a satisfying Asian-inspired meal on its own, or can be paired with your favorite side dishes.

Serving Suggestions: Serve with steamed bok choy or stir-fried green beans on the side, for a nutritious and colorful meal.
