Rice with Beef, Mushrooms and Cashew Nuts
Ingredients:
- 1 cup jasmine rice
- 2 cups water
- 1 lb beef sirloin, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced
- 1/4 cup soy sauce
- 2 tbsp hoisin sauce
- 1 tbsp cornstarch
- 1/2 cup cashew nuts
- 1 cup sliced mushrooms
- 2 green onions, thinly sliced
- 2 tbsp vegetable oil
Instructions:
- Rinse the rice in cold water and drain. Add the rice and water to a saucepan and bring to a boil. Reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- In a bowl, whisk together the soy sauce, hoisin sauce, and cornstarch. Add the sliced beef and marinate for at least 10 minutes.
- In a large skillet or wok, heat the vegetable oil over high heat. Add the garlic and ginger and stir-fry for 1 minute.
- Add the marinated beef and stir-fry for 3-4 minutes, or until browned.
- Add the sliced mushrooms and cashew nuts to the skillet and stir-fry for another 2-3 minutes, or until the mushrooms are tender.
- Serve the beef and mushroom mixture over the cooked rice, garnished with sliced green onions.
