Ricotta-Spinach and Ricotta-Pumpkin Ravioli Recipe

Ingredients:

  • 1 package of fresh pasta dough (12-16 oz)
  • 1 cup of ricotta cheese
  • 1 cup of fresh spinach, chopped
  • 1 cup of cooked pumpkin, mashed
  • 1/2 cup of grated Parmesan cheese
  • 1 egg
  • 1/4 teaspoon of nutmeg
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine ricotta, chopped spinach, grated Parmesan cheese, egg, salt, pepper and nutmeg. Mix thoroughly.

  6. Bring a pot of salted water to a boil and cook the ravioli for 3-4 minutes or until they float to the surface. Drain well, but be gentle handling them so they don’t break apart.
