Risotto of Broken Pasta
Ingredients:
- 1/2 cup broken pasta (spaghetti, fettuccine or linguine)
- 1 cup Arborio rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 4 cups chicken or vegetable stock
- 1/2 cup grated parmesan cheese
- 2 tablespoons butter
- 2 tablespoons olive oil
- salt and pepper to taste
Instructions:
- Heat the chicken or vegetable stock in a separate pot and keep it warm.
- In a large pan, heat the olive oil and butter until melted over medium heat.
- Once the butter has melted, add onions and garlic. Cook until onions are translucent, approximately 4-5 minutes.
- Add the broken pasta to the pan and cook until lightly toasted, approximately 2-3 minutes.
- Add the Arborio rice and cook until the rice is lightly toasted, approximately 2-3 minutes.
- Add the dry white wine and stir until the wine is absorbed by the rice.
- Begin adding stock, one ladle at a time, and stirring until fully absorbed before adding more. Repeat until the rice is al dente and the risotto is creamy (approximately 20-25 minutes).
- Remove the pan from heat and stir in grated parmesan cheese.
- Season with salt and pepper to taste.
- Let the risotto rest for 2-3 minutes before serving.
Serving Suggestions:
- Serve hot with a sprinkle of fresh parsley on top.
- Pair with a glass of dry white wine.
- As a variation, add diced tomatoes or sautéed mushrooms while cooking.
