Risotto with Chanterelles: Gourmet Recipe

Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup white wine
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter
  • 2 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1 cup fresh chanterelle mushrooms, cleaned and chopped
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste

Directions

  1. In a large saucepan, heat the vegetable broth over medium heat and keep it simmering.
  2. In another saucepan, melt the butter and sauté the onion and garlic over medium heat until the onion becomes translucent.
  3. Add the Arborio rice to the onion mixture and heat it for a minute or two before adding the white wine.
  4. Stir the rice and cook for a few minutes until the wine is absorbed.
  5. Add a ladleful of simmering vegetable broth to the rice and stir until all the liquid is absorbed. Continue adding broth and stirring until the rice becomes creamy and is cooked al dente, about 20 minutes.
  6. Stir the chanterelles and parsley into the rice mixture. Cook for a couple of minutes until the mushrooms are soft and cooked through.
  7. Remove the pan from the heat and stir in the grated Parmesan cheese.
  8. Season with salt and pepper to taste and serve immediately.
