Roast Leg of Lamb: Slow Cooking
Ingredients:
- 1 Leg of Lamb (approx 2-3kgs)
- 5 Garlic cloves, crushed
- 1 tbsp. Rosemary, finely chopped
- 2 tbsp. Olive oil
- 1 Lemon, juice and zest
- Salt and pepper
Instructions:
- Preheat your oven to 160°C (fan).
- In a small bowl, mix together the crushed garlic, rosemary, olive oil, lemon zest and juice, salt and pepper.
- Pierce numerous holes into the leg of lamb using a sharp knife, and then rub the mixture all over it.
- Place the lamb into a roasting dish and cover it with foil.
- Roast the lamb for 3-4 hours, basting it regularly with the juices in the dish.
- 30 minutes before completion, remove the foil so that the lamb can crisp up.
- Remove the lamb from the oven and let it rest for 15 minutes before carving and serving.
