Roast Leg of Lamb: Slow Cooking

Ingredients:

  • 1 Leg of Lamb (approx 2-3kgs)
  • 5 Garlic cloves, crushed
  • 1 tbsp. Rosemary, finely chopped
  • 2 tbsp. Olive oil
  • 1 Lemon, juice and zest
  • Salt and pepper

Instructions:

  1. Preheat your oven to 160°C (fan).
  2. In a small bowl, mix together the crushed garlic, rosemary, olive oil, lemon zest and juice, salt and pepper.
  3. Pierce numerous holes into the leg of lamb using a sharp knife, and then rub the mixture all over it.
  4. Place the lamb into a roasting dish and cover it with foil.
  5. Roast the lamb for 3-4 hours, basting it regularly with the juices in the dish.
  6. 30 minutes before completion, remove the foil so that the lamb can crisp up.
  7. Remove the lamb from the oven and let it rest for 15 minutes before carving and serving.

This Slow Roast Leg of Lamb is incredibly tender and packed with flavor. It makes an ideal centerpiece for a special occasion meal, served alongside traditional accompaniments like roast potatoes and vegetables.
