Roast Turkey Wellington: Festive Recipe
Ingredients:
- 1 whole boneless turkey breast (about 2-3 pounds)
- 1 package frozen puff pastry (thawed)
- 1 cup finely chopped mushrooms
- 1/2 cup chopped onion
- 2 cloves minced garlic
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- 1 tbsp chopped fresh thyme
- 2 tbsp butter
- 1 egg, beaten
- Salt and freshly ground black pepper
Instructions:
- Preheat oven to 400 degrees Fahrenheit.
- Season the turkey breast with salt and pepper and roast for 25-30 minutes, or until fully cooked. Let cool and set aside.
- Melt the butter in a large skillet over medium heat. Add the mushrooms, onions, and garlic and cook until softened, about 5 minutes. Pour the wine into the skillet and bring to a simmer. Cook until the liquid has reduced and the mixture is thickened, about 10 minutes. Remove from heat and stir in the parsley, thyme, salt, and pepper. Set aside to cool.
- Unfold the puff pastry on a lightly floured surface and roll out to about 1/4 inch thickness. Place the cooled mushroom mixture on top of the puff pastry.
- Place the turkey breast on top of the mushroom mixture. Gently roll up the puff pastry, making sure the turkey and mushroom mixture are completely covered.
- Place the wrapped turkey on a baking sheet with the seam side down. Brush the top and sides with the beaten egg.
- Bake for 35-40 minutes, or until the puff pastry is golden brown and crispy. Let the turkey rest for a few minutes before slicing and serving.
