Roast Turkey Wellington: Festive Recipe

Ingredients:

  • 1 whole boneless turkey breast (about 2-3 pounds)
  • 1 package frozen puff pastry (thawed)
  • 1 cup finely chopped mushrooms
  • 1/2 cup chopped onion
  • 2 cloves minced garlic
  • 1/2 cup dry white wine
  • 1/4 cup chopped fresh parsley
  • 1 tbsp chopped fresh thyme
  • 2 tbsp butter
  • 1 egg, beaten
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Season the turkey breast with salt and pepper and roast for 25-30 minutes, or until fully cooked. Let cool and set aside.
  3. Melt the butter in a large skillet over medium heat. Add the mushrooms, onions, and garlic and cook until softened, about 5 minutes. Pour the wine into the skillet and bring to a simmer. Cook until the liquid has reduced and the mixture is thickened, about 10 minutes. Remove from heat and stir in the parsley, thyme, salt, and pepper. Set aside to cool.
  4. Unfold the puff pastry on a lightly floured surface and roll out to about 1/4 inch thickness. Place the cooled mushroom mixture on top of the puff pastry.
  5. Place the turkey breast on top of the mushroom mixture. Gently roll up the puff pastry, making sure the turkey and mushroom mixture are completely covered.
  6. Place the wrapped turkey on a baking sheet with the seam side down. Brush the top and sides with the beaten egg.
  7. Bake for 35-40 minutes, or until the puff pastry is golden brown and crispy. Let the turkey rest for a few minutes before slicing and serving.
