Roast Veal with Gremolata Recipe
Ingredients:
- 1 1/2 kg veal roast
- 3 garlic cloves, minced
- 1/2 cup vegetable stock
- 1/2 cup dry white wine
- 1/4 cup chopped fresh parsley
- 1/4 cup freshly squeezed lemon juice
- 2 tbsp lemon zest
- 2 tbsp olive oil
- Salt
- Pepper
Instructions:
- Preheat the oven to 180°C.
- Season the veal roast with salt and pepper.
- In a roasting pan, heat the olive oil over medium heat.
- When the oil is hot, add the veal and brown on all sides for about 5-6 minutes.
- Remove the veal from the pan and place it on a plate.
- Add the minced garlic to the roasting pan and sauté for about a minute.
- Next, pour in the vegetable stock and white wine. Scrape the bottom of the pan to incorporate any brown bits.
- Place the veal back in the roasting pan and transfer it to the preheated oven.
- Roast the veal for about 1 1/2 hours or until the internal temperature of the roast reaches 63°C.
- While the veal is roasting, make the gremolata. In a small bowl, mix together the chopped parsley, lemon juice, and lemon zest.
- Once the roast has reached the desired temperature, remove it from the oven and let it rest for 10 minutes.
- Slice the veal and serve with the gremolata on top.
