Roast Veal with Gremolata

Ingredients:

  • 1 1/2 kg veal roast
  • 3 garlic cloves, minced
  • 1/2 cup vegetable stock
  • 1/2 cup dry white wine
  • 1/4 cup chopped fresh parsley
  • 1/4 cup freshly squeezed lemon juice
  • 2 tbsp lemon zest
  • 2 tbsp olive oil
  • Salt
  • Pepper

Instructions:

  1. Preheat the oven to 180°C.
  2. Season the veal roast with salt and pepper.
  3. In a roasting pan, heat the olive oil over medium heat.
  4. When the oil is hot, add the veal and brown on all sides for about 5-6 minutes.
  5. Remove the veal from the pan and place it on a plate.
  6. Add the minced garlic to the roasting pan and sauté for about a minute.
  7. Next, pour in the vegetable stock and white wine. Scrape the bottom of the pan to incorporate any brown bits.
  8. Place the veal back in the roasting pan and transfer it to the preheated oven.
  9. Roast the veal for about 1 1/2 hours or until the internal temperature of the roast reaches 63°C.
  10. While the veal is roasting, make the gremolata. In a small bowl, mix together the chopped parsley, lemon juice, and lemon zest.
  11. Once the roast has reached the desired temperature, remove it from the oven and let it rest for 10 minutes.
  12. Slice the veal and serve with the gremolata on top.
