Roasted Chicken in the Oven with Potatoes Recipe

Ingredients:

  • 1 whole chicken, about 1.5 kg
  • 1 kilo potatoes, peeled and quartered
  • 4 cloves garlic, chopped
  • 3 sprigs of fresh rosemary
  • 4 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine the chopped garlic, rosemary sprigs, 2 tablespoons olive oil, sea salt and black pepper. Mix well.
  3. Rub the mixture all over the chicken, making sure to also rub inside the cavity. Set the chicken aside.
  4. In a large roasting tin, add the quartered potatoes. Drizzle the remaining 2 tablespoons of olive oil over the potatoes and season with salt and black pepper. Mix well.
  5. Place the chicken on top of the potatoes in the roasting tin. Make sure that the chicken is sitting on top of the potatoes and not touching the bottom of the roasting tin.
  6. Roast the chicken in the oven for about 1 hour and 20 minutes or until the internal temperature of the chicken has reached 75°C (167°F) and the skin is crispy and golden brown.
  7. Remove the roasting tin from the oven and let the chicken rest for about 10 minutes before carving.
