Roasted Goose with Chestnuts Recipe

Ingredients:

  • 1 whole goose (5-6 lbs.)
  • 1 lb. chestnuts, peeled and halved
  • 2 onions, chopped
  • 2 carrots, chopped
  • 3 stalks celery, chopped
  • 2 cloves garlic, chopped
  • 2 tbsp. olive oil
  • 1 tbsp. salt
  • 1 tsp. black pepper
  • 2 cups chicken or vegetable stock

Directions:

  1. Preheat oven to 375°F.
  2. Clean and rinse the goose inside and out, then pat dry with paper towels.
  3. In a large roasting pan, combine the chestnuts, onions, carrots, celery, garlic, olive oil, salt, and black pepper.
  4. Stuff the goose with the chestnut mixture and truss the legs together with kitchen twine.
  5. Place the goose on top of the vegetables in the roasting pan.
  6. Pour the stock over the vegetables and goose.
  7. Cover the roasting pan with foil and roast in the oven for 2 hours.
  8. Remove the foil and continue to roast for another hour or until the skin is crispy and golden brown.
  9. Remove from the oven and let rest for 10-15 minutes before carving.
