Roasted Guinea Fowl with Chestnuts Recipe

Ingredients:

  • 1 whole guinea fowl
  • 200g chestnuts, peeled and halved
  • 4-5 sprigs of thyme
  • 3 cloves of garlic, peeled and crushed
  • 1 lemon, cut into wedges
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Season the guinea fowl inside and out with salt and pepper, and place it in a roasting tray.
  3. In a bowl, mix together the chestnuts, thyme, garlic and olive oil. Season with salt and pepper.
  4. Stuff the chestnut mixture inside the guinea fowl and scatter the remaining chestnuts around it in the roasting tray.
