Ingredients:

  • 2 lbs. monkfish fillet, trimmed and cut into 8 pieces
  • 4 clementines, peeled and sliced crosswise
  • 2 cloves garlic, thinly sliced
  • 1 tsp. cumin
  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tbsp. olive oil
  • 1/4 cup white wine
  • 1/4 cup chicken stock
  • 1/4 cup chopped fresh parsley
