Ingredients:
- 4 skrei fillets, skinless
- 1/2 cup chorizo, sliced
- 1/2 cup olives, pitted and chopped
- 2 tbsp olive oil

For the Pepper Sauce:
- 2 red bell peppers
- 1 tbsp olive oil
- 1 shallot, diced
- 1 garlic clove, minced
- 1/4 cup chicken stock
- 1 tbsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions:
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and drizzle with olive oil.
- Arrange the skrei fillets on the baking sheet and season with salt and pepper.
- Sprinkle the sliced chorizo and chopped olives over the fillets.
- Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
