Roasted Skrei with Pepper Sauce, Chorizo and Olives

Ingredients:

  • 4 skrei fillets, skinless
  • 1/2 cup chorizo, sliced
  • 1/2 cup olives, pitted and chopped
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Pepper Sauce:

  • 2 red bell peppers
  • 1 tbsp olive oil
  • 1 shallot, diced
  • 1 garlic clove, minced
  • 1/4 cup chicken stock
  • 1 tbsp balsamic vinegar
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and drizzle with olive oil.
  3. Arrange the skrei fillets on the baking sheet and season with salt and pepper.
  4. Sprinkle the sliced chorizo and chopped olives over the fillets.
  5. Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through.
  6. While the fish is cooking, prepare the pepper sauce.
  7. Roast the red bell peppers over an open flame until charred on all sides.
