Rolled Sole with Mashed Celery and Truffle Oil Recipe

Ingredients

  • 4 fillets of sole, skin and bone removed
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup melted butter
  • 1/4 cup white wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 4 cups chopped celery
  • 2 cloves garlic, minced
  • 2 tablespoons truffle oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400F.
  2. In a bowl, combine breadcrumbs, Parmesan cheese, parsley, melted butter, salt and pepper to taste. Mix well.
  3. Place each sole fillet on a cutting board and place some of the breadcrumb mixture on top of each fillet.
  4. Roll up each fillet, securing with a toothpick if needed and place them in a baking dish.
  5. Pour white wine and chicken broth over the fish rolls and bake for 15-20 minutes or until cooked through.
  6. In a large pot, boil the chopped celery until tender. Drain the excess water and add minced garlic, heavy cream, truffle oil and salt and pepper to taste. Mash the celery mixture until smooth.
  7. Serve the fish rolls hot with a side of the mashed celery sprinkled with additional truffle oil and parsley.
