Rooster Crests with Avocado Pesto, Spring Onions and Steamed Prawns

Ingredients

  • 8 large rooster crests
  • 20 medium-sized prawns, peeled and deveined
  • 1/4 cup olive oil
  • 1/2 cup chopped spring onion
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • For the avocado pesto:
    • 2 ripe avocados
    • 1/4 cup chopped basil
    • 1/4 cup chopped parsley
    • 1/4 cup chopped cilantro
    • 1/2 small shallot
    • 2 cloves garlic
    • 1/4 cup olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 cup lemon juice

Instructions

  1. To make the avocado pesto, add the avocado, basil, parsley, cilantro, shallot, garlic, olive oil, salt, black pepper, and lemon juice in a food processor and blend until smooth.
  2. Clean the rooster crests and cut off the top and bottom parts. Cut into smaller pieces and set aside.
  3. Heat up a skillet with 1/4 cup of olive oil over medium-high heat. Add the rooster crests and cook for 3-4 minutes on each side, or until they are browned and crispy. Remove from the skillet and set aside.
  4. In the same skillet, add the prawns and cook for 1-2 minutes on each side until they turn pink. Remove from heat and set aside.
  5. To serve, place the rooster crests on a plate and spoon some of the avocado pesto over them. Add the spring onions and steamed prawns on top. Add a pinch of salt and black pepper to taste.
