Saddle of Lamb

Ingredients:

  • 1 saddle of lamb, boned and rolled (approx. 1kg)
  • 2 tbsp olive oil
  • 4 garlic cloves, crushed
  • 2 tbsp fresh rosemary, chopped
  • 1 lemon, zested and juiced
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions:

  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Mix together the olive oil, garlic, rosemary, lemon zest and juice, salt and pepper to create a marinade.
  3. Rub the marinade all over the lamb, ensuring that it is fully coated.
  4. Place the lamb in a roasting tin and roast in the oven for 25-30 minutes for slightly pink or 35-40 minutes for well-done.
  5. Allow the lamb to rest for 10 minutes before carving and serving.

Serving Suggestions:

The saddle of lamb pairs well with roasted vegetables such as carrots and potatoes, and can be served with a simple side salad. A glass of red wine complements the rich flavour of the lamb.
