Saddle of Lamb
Ingredients:
- 1 saddle of lamb, boned and rolled (approx. 1kg)
- 2 tbsp olive oil
- 4 garlic cloves, crushed
- 2 tbsp fresh rosemary, chopped
- 1 lemon, zested and juiced
- 1 tsp salt
- 1/2 tsp black pepper
Instructions:
- Preheat the oven to 200°C/400°F/gas mark 6.
- Mix together the olive oil, garlic, rosemary, lemon zest and juice, salt and pepper to create a marinade.
- Rub the marinade all over the lamb, ensuring that it is fully coated.
- Place the lamb in a roasting tin and roast in the oven for 25-30 minutes for slightly pink or 35-40 minutes for well-done.
- Allow the lamb to rest for 10 minutes before carving and serving.
Serving Suggestions:
The saddle of lamb pairs well with roasted vegetables such as carrots and potatoes, and can be served with a simple side salad. A glass of red wine complements the rich flavour of the lamb.
