Saddle of Lamb with Hay Recipe

Ingredients:

  • 1 saddle of lamb (about 1.2kg)
  • 2 garlic cloves, crushed
  • 1 tsp dried thyme
  • Salt and pepper
  • 2 tbsp olive oil
  • 100g butter
  • 100g fresh hay
  • 50ml red wine

Instructions:

  1. Preheat the oven to 200°C.
  2. Mix the garlic, thyme, salt, and pepper together in a small bowl.
