Saddle of Suckling Lamb in Kadaïf, Lemon Condiment Recipe
Ingredients:
- 1 saddle of suckling lamb
- 200 grams kadaïf pastry
- 200 milliliters olive oil
- 1 lemon
- 2 egg yolks
- 2 cloves of garlic
- 1 bunch of parsley
- Salt and pepper to taste
Instructions:
- Preheat the oven to 180°C.
- Make the lemon condiment: finely grate the zest of the lemon and squeeze the juice into a bowl. Add the egg yolks, garlic cloves (finely chopped), and chopped parsley, then whisk together until smooth. Slowly add the olive oil while whisking until you get a creamy sauce. - Season the saddle of lamb with salt and pepper and brown it in a hot pan with a little olive oil for 2-3 minutes on each side.
- Place the kadaïf pastry in the center of a baking tray and put the saddle of lamb on top of it.
- Cover the saddle of lamb with the kadaïf pastry, making sure it is completely covered. Drizzle some olive oil over the pastry.
- Bake in the oven for 20-25 minutes, or until the pastry is golden brown and the lamb is cooked to your liking.
- Remove from the oven and let it rest for at least 5 minutes before slicing it into portions.
- Serve with the lemon condiment on the side.
