Saddle of Suckling Lamb in Kadaïf, Lemon Condiment Recipe

Ingredients:

  • 1 saddle of suckling lamb
  • 200 grams kadaïf pastry
  • 200 milliliters olive oil
  • 1 lemon
  • 2 egg yolks
  • 2 cloves of garlic
  • 1 bunch of parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 180°C.
  2. Make the lemon condiment: finely grate the zest of the lemon and squeeze the juice into a bowl. Add the egg yolks, garlic cloves (finely chopped), and chopped parsley, then whisk together until smooth. Slowly add the olive oil while whisking until you get a creamy sauce. Season with salt and pepper to taste.
  3. Season the saddle of lamb with salt and pepper and brown it in a hot pan with a little olive oil for 2-3 minutes on each side.
  4. Place the kadaïf pastry in the center of a baking tray and put the saddle of lamb on top of it.
  5. Cover the saddle of lamb with the kadaïf pastry, making sure it is completely covered. Drizzle some olive oil over the pastry.
  6. Bake in the oven for 20-25 minutes, or until the pastry is golden brown and the lamb is cooked to your liking.
  7. Remove from the oven and let it rest for at least 5 minutes before slicing it into portions.
  8. Serve with the lemon condiment on the side.
