Salad of Pasta, Beans, Tomatoes and Fresh Herbs Recipe

Ingredients:

  • 8 oz. pasta (penne or fusilli)
  • 1 can of beans (black, kidney, or cannellini)
  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh herbs (basil, parsley, or cilantro)
  • 1/4 cup olive oil
  • 2 Tbsp. red wine vinegar
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions.
  2. While pasta is cooking, rinse and drain the can of beans and cut cherry tomatoes in half
  3. In a large bowl, mix together olive oil, red wine vinegar, minced garlic, salt, and pepper.
  4. When pasta is done, rinse under cold water to cool down and add it to the bowl with the dressing, gently mixing it in to coat it.
  5. Add the beans, cherry tomatoes, and fresh herbs to the bowl. Gently mix everything together until combined.
  6. Adjust seasoning to taste with salt and pepper.
  7. Chill the salad in the fridge for at least 30 minutes before serving.
