Salmon-Apple Salad with Egg Sauce Recipe
Ingredients for Salad:
- 2 ripe avocados, cubed
- 2 cups of cubed apple (use Granny Smith for some tartness)
- 1/2 fresh lemon (juiced)
- 1/4 purple onion, diced
- 1/2 cucumber, peeled and sliced
- 1 lb. smoked salmon, chopped
- 5 oz. mixed greens
- Salt and pepper to taste

- 3 hard boiled eggs, peeled
- 1/2 cup of mayo
- 1 tsp. Dijon mustard

Instructions:
- In a large salad bowl, combine the cubed avocados and apple. Drizzle with fresh lemon juice and toss to coat.
