Salmon-Apple Salad with Egg Sauce Recipe

Ingredients for Salad:

  • 2 ripe avocados, cubed
  • 2 cups of cubed apple (use Granny Smith for some tartness)
  • 1/2 fresh lemon (juiced)
  • 1/4 purple onion, diced
  • 1/2 cucumber, peeled and sliced
  • 1 lb. smoked salmon, chopped
  • 5 oz. mixed greens
  • Salt and pepper to taste

Ingredients for Egg Sauce:

  • 3 hard boiled eggs, peeled
  • 1/2 cup of mayo
  • 1 tsp. Dijon mustard
  • 1 tsp. honey
  • Salt and pepper to taste

Instructions:

  1. In a large salad bowl, combine the cubed avocados and apple. Drizzle with fresh lemon juice and toss to coat.
  2. Add diced onion, sliced cucumber, smoked salmon, and mixed greens. Toss all the ingredients together to mix.
  3. Season with salt and pepper to taste.
  4. In a separate small bowl, mash eggs with a fork.
