Ingredients

  • 4 salmon fillets
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 garlic cloves, minced
  • 1 tablespoon grated ginger
  • 4 green onions, sliced
  • 1 red bell pepper, sliced
  • 1 cup snow peas, trimmed
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F.
  2. Cut four 14-inch squares of parchment paper and fold each in half.
  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey, garlic, and ginger. Season the salmon fillets with salt and pepper, and brush both sides with the marinade.
  4. Divide the green onions, red bell pepper, and snow peas among the parchment paper. Top each with a salmon fillet and spoon the remaining marinade on top. Sprinkle with sesame seeds.
  5. Seal each parchment packet tightly by folding the edges over each other and crimping them tightly.
  6. Place the packets on a baking sheet and bake for 15-20 minutes, or until the salmon is cooked through.
  7. Remove from the oven and carefully open the packets. Serve the salmon and vegetables in the parchment paper or transfer to plates.
