Ingredients:

  • 4 salmon fillets
  • 4 links of chorizo sausage, casing removed and sliced
  • 4-5 medium-sized purple artichokes, trimmed and sliced into quarters
  • 2 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 tablespoon of fresh lemon juice
  • Salt and pepper to taste

Instructions:

  1. Season the salmon fillets with salt, pepper, and lemon juice. Set aside.
  2. In a skillet, heat up the olive oil over medium-heat.
  3. Cook the chorizo until it’s brown and crispy. Add the minced garlic and cook for 1-2 minutes.
