Salmon Fillet with Chorizo and Purple Artichokes Recipe
Ingredients:
- 4 salmon fillets
- 4 links of chorizo sausage, casing removed and sliced
- 4-5 medium-sized purple artichokes, trimmed and sliced into quarters
- 2 cloves of garlic, minced
- 3 tablespoons of olive oil
- 1 tablespoon of fresh lemon juice
- Salt and pepper to taste
Instructions:
- Season the salmon fillets with salt, pepper, and lemon juice. Set aside.
- In a skillet, heat up the olive oil over medium-heat.
- Cook the chorizo until it’s brown and crispy. Add the minced garlic and cook for 1-2 minutes.
- Add the sliced artichokes to the skillet and cook for about 5-7 minutes or until tender. Push the artichokes and chorizo to the side of the skillet and place the seasoned salmon fillets in the center. Cook each side for approximately 5-6 minutes or until the salmon is cooked through.
