Salmon Koulibiac Recipe

Ingredients:

  • 1 pound salmon fillet, cut into thin slices
  • 1 1/2 cups basmati rice
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped onions
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups vegetable broth
  • 1/2 cup sour cream
  • 2 tablespoons chopped fresh parsley
  • 1 egg
  • 1 sheet puff pastry, thawed

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Cook rice according to package directions.
  3. In a large pan, sauté mushrooms, onions, and garlic until tender.
  4. Add sliced salmon and continue to cook until salmon is just cooked through, approximately 3-4 minutes.
  5. Season salmon mixture with dill, salt, and black pepper.
  6. In a separate bowl, mix together cooked rice, vegetable broth, sour cream, parsley, and beaten egg.

  8. Spread rice mixture onto the center of the puff pastry sheet leaving 2 inches of space on all sides.
  9. Place salmon mixture on top of the rice filling.
  10. Carefully fold the puff pastry over the filling, pressing the edges together to make a seal.
  11. Brush the top of the pastry with beaten egg.
  12. Bake the salmon koulibiac for 35-40 minutes or until the pastry is golden brown and puffed up.
