Salt-crusted fish Recipe

Ingredients:

  • 1 whole fish (such as sea bass or trout), scaled and gutted
  • 2 kg coarse salt
  • 3-4 egg whites
  • 2 lemons, sliced
  • 3-4 sprigs of fresh rosemary or thyme

Instructions:

  1. Preheat the oven to 200°C (390°F).
  2. In a large bowl, mix the coarse salt with the egg whites until you obtain a wet sand-like consistency.
  3. Line a baking dish with half of the salt mixture. Stuff the inside of the fish with the lemon slices and fresh herbs and place the fish on top of the bed of salt. Cover the fish completely with the remaining salt, making a crust around it.
  4. Place the baking dish in the oven and bake for about 30-40 minutes, depending on the size of the fish. The crust should become hard and golden.
