Saltimboccas with Cherry Tomatoes Recipe
Ingredients:
- 4 thin slices of veal
- 8 slices of prosciutto
- 16 fresh sage leaves
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 1/4 cup white wine
- 1 cup cherry tomatoes, halved
- Salt and pepper to taste
Instructions:
- Place each slice of veal between two pieces of plastic wrap and, using a meat mallet or rolling pin, pound until thin.
- Place two slices of prosciutto on top of each slice of veal, then place two sage leaves on top of the prosciutto.
- Roll up the veal tightly and secure with toothpicks.
- Season the flour with salt and pepper, then coat each saltimbocca in the flour, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the saltimboccas and cook until browned on both sides, about 2-3 minutes per side. Remove from the skillet and set aside on a plate.
- Add the white wine to the skillet and cook until reduced by half, scraping the bottom of the skillet to release any browned bits.
- Add the cherry tomatoes to the skillet and cook until softened and slightly caramelized, about 3-4 minutes.
- Return the saltimboccas to the skillet and spoon the tomato mixture over the top.
- Cover the skillet and cook until the saltimboccas are cooked through, about 5-7 minutes.
- Remove the toothpicks and serve hot.
