Saltimboccas with Cherry Tomatoes Recipe

Ingredients:

  • 4 thin slices of veal
  • 8 slices of prosciutto
  • 16 fresh sage leaves
  • 1/2 cup all-purpose flour
  • 1/4 cup olive oil
  • 1/4 cup white wine
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste

Instructions:

  1. Place each slice of veal between two pieces of plastic wrap and, using a meat mallet or rolling pin, pound until thin.
  2. Place two slices of prosciutto on top of each slice of veal, then place two sage leaves on top of the prosciutto.
  3. Roll up the veal tightly and secure with toothpicks.
  4. Season the flour with salt and pepper, then coat each saltimbocca in the flour, shaking off any excess.
  5. In a large skillet, heat the olive oil over medium-high heat. Add the saltimboccas and cook until browned on both sides, about 2-3 minutes per side. Remove from the skillet and set aside on a plate.
  6. Add the white wine to the skillet and cook until reduced by half, scraping the bottom of the skillet to release any browned bits.
  7. Add the cherry tomatoes to the skillet and cook until softened and slightly caramelized, about 3-4 minutes.
  8. Return the saltimboccas to the skillet and spoon the tomato mixture over the top.
  9. Cover the skillet and cook until the saltimboccas are cooked through, about 5-7 minutes.
  10. Remove the toothpicks and serve hot.
