Sardine Escabeche

Description: Sardine Escabeche is a delicious Spanish appetizer made with sardines, vegetables, and a tangy vinegar sauce.

Ingredients:

  • 8-10 fresh sardines, cleaned and scaled
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red pepper, sliced
  • 1 cup white vinegar
  • 1 cup water
  • 3 bay leaves
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Olive oil, for frying

Instructions:

  1. Heat olive oil in a frying pan over medium-high heat.
  2. Season the sardines with salt and pepper, and fry until golden brown on both sides. Remove from the frying pan and set aside.
  3. In the same pan, sauté the sliced onion, garlic, and red pepper until soft.

  5. Bring the mixture to a boil, then reduce heat to low and simmer for 10-15 minutes.

  7. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to develop.
