Savoyard Fondue – Traditional Recipe

Savoyard fondue is a classic dish hailing from the Savoy region of the French Alps. It is made by melting cheese and serving it with crusty bread and potatoes. Here’s the traditional recipe for Savoyard Fondue.

Ingredients:

  • 1 lb. Gruyere cheese
  • 1 lb. Emmental cheese
  • 1 clove garlic, peeled and halved
  • 1 1/2 cups dry white wine
  • 1 Tbsp. cornstarch
  • Nutmeg, freshly grated (to taste)
  • 1 baguette, cubed
  • Boiled potatoes, peeled and cubed

Instructions:

  1. Grate the Gruyere and Emmental cheeses and toss together with cornstarch. Set aside.
  2. Rub the inside of a pot or fondue pot with garlic.
  3. Heat the white wine in the fondue pot over medium heat until gently boiling.
  4. Gradually stir in the cheese mixture, stirring constantly until melted and smooth.
  5. Season with grated nutmeg to taste.

Serving Suggestions:

  • Transfer the fondue to a fondue pot if necessary, and serve alongside cubes of crusty bread and boiled potatoes. Spear a piece of bread or potato with a fondue fork and dip into the melted cheese.
